Eggs

In the future I always want my eggs gently baked at 63 degrees centigrade for an hour.

what happens if its 62 degrees for 59 mins? Where did you find such a requirement, more importantly, does it taste much better than a normal boiled egg?

God, yes. We have to fix the thermometer to the oven in Skåne so we can make those eggs in July. I'll bring the poached eggs thingy.

Barb - just the best eggs I have ever tasted. Amazingly creamy. Had it at the super nice Mathias Dahlgren restaurant in Stockholm. He is one good chef...
